The King Scallop is one of the most valuable shellfish species in the UK. When seen on your plate you might not realise that they are mobile animals who are sensitive to their surroundings. They have multiple eyes around their shell that help them respond to their environment. They propel themselves in water using jets of water created by rapid closure of their valves. Scallop dredging can damage reef habitats, greatly reducing the richness of species in heavily-fished areas.
